A choice of a traditional Epiphany Cake

Epiphany Cake                                                                         Galette des Rois Clementine Corse recipe

preparation: 40min

cooking: 40min
serves 8

2 x puff pastry

1 egg yolk

icing sugar

Pastry cream:

zest of 1 Corsican tangerine

4 small egg yolks

125g full milk

40g sugar

20g cornflour

Almond cream:

3 candied Corsican tangerines

the juice of 1 Corsican tangerine

2cl tangerine liqueur or Grand Marnier

120g ground almonds

100g icing sugar

120g soft butter

2 eggs

15g cornflour

Method for pastry cream:
Whisk the yolks with the sugar and cornflour.
Boil the milk with the zest of the Corsican tangerine. Pour over yolks while whisking...
