Melon, cucumber and fromage frais salad – fresh and savoury

Ingredients:                                                                                                                                                     

– 1 melon                                                                        
– 1 to 2 cucumbers
– cherry tomatoes
– 5 slices ‘prisuttu’ 
– 200g fromage frais
– 1 pressed lemon
– 3 soup spoons olive oil
– fresh basil leaves

Cut the melon in two and remove the seeds. With a melon baller, make small balls.

Dorothy Carrington ‘Lady Rose’ – Corsican in her heart

Born on June 6th, 1910 in North Cerney near Cirencester, Gloucestershire. Her family was dedicated to the Crown, and the profession of arms, and her grandfather was an eminent botanist belonging to the first scientific expedition to Tibet.
At the age of ten she became an orphan, after the disappearance of her father Sir Frederic Carrington in 1913, and her mother Susanna, in 1920. Also a General, her father had participated in African campaigns, which would result in the creation of the British Colony of Rhodesia.
 
In accordance with her mother’s testamentary wishes, she was sent to a girls boarding school, which also enabled her to free herself from the demanding tutelage of her uncles and aunts.

Mint – as a medicinal plant

We all know it, as it is very common – but, how much do we really know about mint ?
Mint has anti-oxidant properties that would reduce the arrival of cardiovascular diseases. Well known for assisting digestion, relieving nausea and pain, treating respiratory infections, gastroenteritis and eczema – also relieving gastrointestinal and biliary spasms or flatulence.
 
Internal use:
5-8g / 1L boiling water
(a pinch per cup, 1 cup morning + evening)
 
External use:
Mint calms. Applied as a poultice on a congested/engorged breast, with wheat flour. The infusion can be used for ulcers, and bruises – it is very effective against scabies. Balsam oil was very popular in the past (obtained by the maceration of the tips of the mint leaves in olive oil, for a month), and applied on wounds.
